| Uruguay and their grill |
Most part of their past, Uruguay had a rich nature, with only some native groups indios charrúas living in it. The white man invaded the Uruguan ground time after time, during their crusade from Argentina to collect thousends of bulls for their rodeo, taking with them al living animals which they encountered. After many years, Uruguay was populated by Guachos, lonely cowboys riding over the prairies on their horse, slaughtering baby cows, when they got hungry, grilling it on a woodfire and throwing the rests to the wild dogs. The habit of grilling meat, therefore, lies in the genes of every Uruguan. Grilling, is a real art that not everybody can do, its prepaired on a iron roaster above a woodfire, comparable with a BBQ, which works with meat alike.

One of the false legends about the invention of grilling, is told by the argentine chef Gabriel Sagel in his guide for the perfect argentine grill. The cook tells that, as they say, the grill found its origen in the departement Uruguayo de Colonia, with the law of amnesty of 1832 which provided freedom to some prisoners. “ In a few hours, a
goup of released horsethieves robbed some bulls of the
local neighbours , put their prison cells on fire and
improvide with the bars
the first modern grill”. This
delicious meal was for all
such a big invention,
that its still popular nowadays.
