From Qapchi, patachi, uman caldo (boullion of the head), cuy frito(fried cavia), pusra, puchero to mondongo and the adobo Ayacuchano, there is one dish which we at La casona prefer to make, the Puca Picante.
Puca Picante
A potato dish prepaired with a base of little potatoes, roasted and grinded peanuts, peaces of pigmeat and veteraga, a seasoning of red peppers and other herbs, which will give this plate its particulair aroma and taste to remember.
It is still unknown where this plate has its origin, but you can always find it in our religious festivals, Social and family partys, therefor this plate is a good representation of the tradition and Ayacuchian grounds. Doña Socorro Muñoz Añaños, who was born in Ayacucho, finds that this typical plate is the best way to represent her origin. For over 25 years she is prepairing this plate to make her tribute to Ayacucho to keep the tradition alive. Therefor she offers her puca picante as a simple menu, as a executive menu and also as a side dish.
